Combining the best in local Alberta ingredients with rustic and traditional Italian cooking is Chef Kris Spencer's specialty. He brings the passion and flavour of Italy to Southern Alberta with his restaurants Alta Vita and Bel Lago.
Chef Spencer says he grew up in a family that loved food and sharing meals together. Despite being kicked out of his high school Foods class and told that he didn't have the aptitude for cooking he persevered and worked in some lower-end restaurants before moving on to take Classical Culinary Arts at the Southern Alberta Institute of Technology. During this time he apprenticed at various resorts throughout the Rockies.
After graduating and working his way up to the sous chef level Spencer says, "My dad and I decided to run our own restaurant. I opened up Bel Lago in Waterton but I felt like I needed to step it up one more notch so I moved to Italy for six months and went to school in Calabria. I immersed myself in the Italian culture and when I came back my mentality and food style had changed. I started to do real rustic, old style Italian food."
